Chef Mary Kiernan, Associate Teaching Professor in Falk College was interviewed by Prevention for the piece, “Popular Carrots Recalled Nationwide Due to Possible Salmonella Contamination.”
After a recall on carrots due to the possibility of salmonella, Syracuse Professor Mary Kiernan, who specializes in nutrition and food studies, said, ‘thoroughly washing your produce “is always recommended.” Kiernan added that “washing does not kill the bacteria. Cooking the product will kill it. The concern, especially in the summertime, is eating raw carrots.”
