Sudha Raj, a Teaching Professor in the Nutrition & Food Studies program in Falk College, was quoted by Voice of America (Russian language edition) for the story “U.S. meat substitutes boom.” Professor Raj, an expert on vegetarian nutrition, is featured in the video which discusses how many more Americans are consuming vegetable based products during the COVID-19 pandemic.
